Staka is a dairy product traditionally made in Crete from sheep’s or goat’s milk. Staka comes from the tsipa (cream) of milk, which forms on the surface of the collected milk.
Cooking Method:
Heat over low heat and add a small amount of flour, causing the proteins to separate from the fat. The fat, known as lard, is collected separately while the white and solid mass of proteins that remains is the lard. It is cooked with eggs, with spaghetti, pilaf or even in pies
